Sweet Potatoes Praline

2 lb. sweet potatoes (about 2 large ones)
1/3 c. orange juice
2 ½ Tbl. Brandy
2 Tbl. Butter melted
1/6 c. brown sugar, firmly packed
½ Tbl. Grated orange rind
1 tsp. salt
½ tsp. ground ginger
Pepper

Topping

½ c. pecans, chopped
1/3 c. brown sugar
¼ c. unsalted butter, melted
12 tsp. ground cinnamon

Boil the sweet potatoes until they’re soft. Hold under running cold water to slip the skins off. Puree them in the food processor. When smooth add the remaining ingredients and beat for one minute more. Pour into a small casserole dish and smooth the top.

Thoroughly mix together the ingredients for the topping and spread evenly on the sweet potatoes .

Bake for 45 to 50 minutes at 350 degrees. Allow to stand for at least 10 minutes before serving.
