Nearly anyone will tell you to wash lettuce in ice cold water – it sounds like a no-brainer!  However, this is not the best way to keep your lettuce crisp.  Instead, wash by immersing your lettuce in a sink or tub full of warm water.  The warm water opens up the pores of the lettuce and helps it rehydrate.  After washing, put the lettuce in a colander and shake it to remove the excess moisture.  Then, refrigerate for at least an hour to let it crisp up. This technique works for other greens too.
